Minced pork with mixed vegetables aka 4 Heavenly kings  .......... so this dish must be fit for a king!   No, no, it's only a simple stir-fry dish of mince meat and 4 types of vegetables of your choice.   The heavenly kings refer to the 4 Canto pop singers of Hong Kong and I really have no inkling  how this name came about.

This dish is normally cooked with sambal belacan and it should be slightly spicy.  However, in this case I tweaked it a bit and used preserved bean paste and served it with plain white porridge ......... simply delectable!



I used 4 angle beans, long beans, okra and brinjal with a little bit of red chilly for colour.



Also some dried shrimps, minced pork which has been marinated and some chopped garlic.







A simple dish of stir-fried vegetables, crispy and crunchy fit enough for a King!


Recipe for Minced pork with mixed vegetables aka 4 Heavenly Kings

Ingredients
  • 170 gm mince pork
  • 15 gm dried shrimps
  • 5 pips garlic, chopped
  • 140 gm brinjal
  • 50 gm okra
  • 90 gm 4 angle beans
  • 80 gm long beans
  • 1 red chilly
  • 2  tsp preserved bean paste - 'tau cheong'
  • Oil for frying
Seasoning for mince pork
  • 1  tsp cornflour
  • 1/2  tsp salt
  • 1  tsp sugar
  • 1  tbsp oyster sauce
Marinate the mince pork with the above seasoning for an hour or more.

Preparation
  1. Cut up the brinjal, long beans, okra and 4 angle beans into bite size.
  2. Saute the chopped garlic with some oil till fragrant, add in the dried shrimps, preserved bean paste and the mince pork, stir-fry.
  3. Once the pork is semi cooked, add in the brinjal and sprinkle in some water when the dish is too dry.
  4. Stir-fry till the brinjals are a bit soft, then toss in the long beans followed by the okra and finally the 4 angle  beans, sprinkling in more water when necessary.  Toss in the cut chilly as well.
  5. Add salt, sugar and light soya sauce to taste.
  6. Dish out and serve with rice or plain white porridge.

Braised Pork Belly with Mui Choy   ~    梅菜焖五花肉 Ingredients  400 gm pork belly cut into bite size 100 gm  preserved sweet mui choy 3 cloves of garlic 2 slices ginger Seasoning for the pork belly 1 Tbsp dark soya sauce 1/4 Tbsp sugar 1/4 Tbsp sesame oil 1/4 Tbsp oyster sauce 1/2 tsp pepper 1/8 tsp light soya sauce Method Season the pork belly for about an hour or more.  Set aside. Soak the mui choy for 45 mins., rinse and squeeze dry.  Cut into slices Heat some oil in the wok, fry the mui choy.  Add in the ginger slices.  Stir-fry. Add in the pork  belly, fry for a while and
