Jackfruit - Artocarpus heterophyllus of the mulberry family which is native to parts of South and South East Asia is an aromatic fleshy fruit renowned for its delicious taste. It is low in saturated fat, cholesterol and sodium and high in vitamin C and manganese.
The Jackfruit is enormous and prickly on the outside, looks somewhat like a durian. Once the fruit is opened you'll find 'bulbs' ...... a kind of fleshy covering for the true seeds which are round and dark like chestnuts. These seeds can be eaten once boiled. When cutting up a Jackfruit, better to oil your knife and hands before cutting, as the fruit is very sticky. You'll need to acquire the taste of the Jackfruit which frequently does not appeal to those unfamiliar with it.

This is one of the must-have items whenever we go for have dim-sum ...... 'Wu Kok' or Yam dumplings. Initially I had a hard time struggling with the soft and sticky dough in the hot and stuffy kitchen, but fortunately after chilling it in the fridge for 50 mins., it could be 'man-handled' quite easily! Phew, not too bad as this is my first attempt!
Wat Tan Hor Fun literally means flat rice noodles with smooth egg sauce. There are 2 types of Hor Fun ~ flat rice noodles. The thin and soft smooth ones are specially made to go with a soup base while the broader and thicker one is meant for stir-frying, which is the type that I'm using for this dish.
Whipped up this one-dish meal for dinner recently. Added an egg after reading some article regarding the goodness of egg yolk which is the healthiest part of the egg. There are also indications that eating whole eggs actually raise the good HDL cholesterol. After all, the yolk contains much of the food that the chick depends on for growth. I happened to be in Kuala Lumpur last Saturday and since it was the eve of Mother's Day, decided to celebrate the occasion with my siblings. So, four of us trotted off to The Lobsterman @ SS2, Petaling Jaya for our dinner. I've heard of this seafood restaurant but have not yet tried their goodies. It was indeed a very sumptuous meal, a bit on the high side though, but nonetheless we mothers should pamper ourselves and indulge, once in a while, what more as it's Mother's Day!
Mothers are most likely the hardest working people in the world ~ yet they will probably never receive all the praise they are due. In a way, this is easy to understand. For how could words ever express a lifetime of appreciation ~ especially for all the lovely mums out there, young and old! Happy Mother's Day

I've been pondering what to do with the egg whites, leftover from making the egg glaze for bread, and yes I remembered coming across a Pumpkin Seeds Cisps from MaryMoh of Keep learning keep smiling, a blog with many original recipes. As for this recipe, I reduced the sugar, replaced pumpkin seeds with almond flakes, tweaked the method a bit and here's what I got ...... 34 pieces in all.
