Lemony Choc Chip Friands ~ 柠檬巧克力费南雪

These delightful light-as-air cakes are based on French Financiers and are super easy to make.  I used the basic recipe but adjusted the ingredients for variations.   These dainty cakes can be served as afternoon tea or just with a cup of hot tea or an after-dinner dessert.





Lemony Choc Chip Friands  ~  柠檬巧克力费南雪
Ingredients
  • 80 gm melted butter
  • 120 gm icing sugar
  • 60 gm almond meal (ground almond)
  • 50 gm plain flour, sifted
  • 4 egg whites
  • 45 gm choc chips
  • 2 tsp lemon juice (optional)
  • 1/2 tsp baking powder
  • icing sugar to dust
Method
  1. Sift flour, icing sugar into a mixing bowl.  Add in almond meal, mix well and make a well in the centre of the mixture.
  2. Lightly whisk the egg whites till frothy.  Pour the egg whites, lemon juice into the mixture, followed by the melted butter.  Lightly stir to form a soft batter.
  3. Scoop the mixture into the greased and flour dusted Friand pan.
  4. Bake in a preheated oven @  180 deg.C for 15 to 20 mins.  Test with a skewer till it comes out clean.
  5. Let cool and dust with icing sugar before serving.
  6. Yield :  7 Friands

Country style steam chicken

This is one simple recipe of  steamed chicken dish which I'm sure many bloggers have blogged before.  Tasty yet easy and quick to prepare, this dish pairs very well with steamy hot white rice.

Honey glazed Char Siew (3) 蜜汁叉烧

I have made Honey Maltose Char Siew and Chicken Char Siew before and this is another version of char siew,  glazed with honey.  I like my char siew to be slightly sweet and sticky and without the addition of red colouring.   Sliced up to serve, this juicy, tender char siew pairs very well with rice or noodles.

Ingredients

700 gm pork belly, skin removed1/2 Tbsp honey1/2 Tbsp light soya sauce1 Tbsp dark soya sauce1 tsp sesame oil2 Tbsp brown sugar1 tsp chopped garlic1 Tbsp Chinese rose winea dash of 5 spice powdera dash of pepperHoney and a bit of water to glazeMethod Marinate the pork belly with the above ingredients for a few hours or preferably overnight.Place the marinated meat in a wok with the gravy and 1/4 cup water, cook on medium heat, turning the meat over once in a while.Once the meat is thoroughly cooked and gravy reduce, transfer the meat onto a parchment lined pan.  Baste the meat with honey glaze and grill for 2 mins. on both sides.Remove …
