Dragon Fruit Sorbet ~ 火龙果冰糕

Dragon fruit aka Pitaya is a gorgeous fruit with a magnificient colour to behold.  This sorbet only requires four ingredients and is a light and refreshing treat with all natural goodness. Dragon Fruit Sorbet ~  火龙果冰糕 Ingredients 2 dragon fruits 3/4 cup ice cold water 1 Tbsp lemon juice 3 Tbsp caster sugar Method Cut the dragon fruits into halves, scoop out the pulp.  Reserve the skins and freeze for later use. Blend the pulp, sugar, water and lemon juice till smooth. Pour mixture into a bowl, cover with cling wrap and let chill for 2 hours or more. Transfer the mixture into the freezer bowl of your ice cream maker, churn for 15 to 20 mins. or as per instructions of your ice cream maker. Pour this into a container and freeze before serving. Serve in the freezed dragon fruit 'shells' or in a bowl. Note :  If the sorbet is not sweet enough to your liking, drizzle with some honey before serving.

Coconut Fruity Popsicles ~ 椰子水果冰棒

To beat the heat and quench your thirst in this hot and sticky weather, try these Coconut Fruity Popiscles.  Naturally refreshing, low in fat,  coconut water is sweet and contains electrolytes which our body loses through our sweat and coconut water is more hydrating than water. Coconut Fruity Popsicles ~  椰子水果冰棒 Ingredients 1.1/2 cups fresh coconut water 1 Tbsp pandan sugar syrup  to mix with the coconut water (optional) coconut & jack fruit meat Method Divide the coconut and jackfruit meat between the ice moulds Fill with coconut water Insert the stick and freeze overnight till firm Yield :  6 Popsicles

Lychee Lemon Sorbet ~ 荔枝柠檬沙冰

What can be more refreshing then a serving of homemade sorbet as an afternoon snack or a dessert? This is a very simple sorbet, basically, it's just frozen water or juice with some fruit and in my case, it's lychee and lemon with a sprinkling of freshly ground kaffir leaves.  The kaffir leaves are not only fragrant but the tiny dots of green just help to make the sorbet more attractive and pretty. Recipe for Lychee Lemon Sorbet ~   荔枝柠檬沙 冰 Ingredients                                        1 can Lychee with juice 1 Tbsp lemon juice 2 kaffir lime leaves, finely shredded A pinch of salt 1 Tbsp Cointreau (optional) Method Puree the Lychee with juice, kaffir leaves, salt and lemon juice in a blender till smooth.  Strain the mixture and blend again. Mango Sorbet 芒果沙冰

Sorbet i s a refreshing dessert to cleanse your palate after a  meal.   I've made mine with some mangoes given by a friend from her orchard and it's fruity and fresh.  Yum is the word and it's perfect to snack on more so on a hot and humid day! Recipe for Mango Sorbet    芒果沙冰  (adapted from 'here' with modification) Ingredients                                2 ripe mangoes, about 1 kg, peeled and pitted 130 gm sugar 160 ml water Juice from 1 lime, about 4 tsp 1 Tbsp Rum or more to taste pinch of salt Method Cook the sugar and water till sugar has dissolved, let cool.
