Peach Resin Snow Fungus Dessert ~ 桃胶雪耳糖水



The scientific name for Peach resin is Prunus Persica which is resin secreted from the Peach tree and form like crystals which are stuck to the tree.  Originated from China, the composition of peach resin is collagen, amino acids.  The rich collagen helps to improve the complexion, nourishes and helps to prevent dryness of the skin.  It also helps to improve bowel movement.  In short, this is an inexpensive substitute to the highly expensive birds nest.




Peach Resin Snow Fungus Dessert  ~    桃胶雪耳糖水


Ingredients
  • 50 gm Peach resin
  • 20 gm snow fungus
  • 30 gm dried longan
  • 30 gm seedless red dates
  • 2 lt water
  • 100 gm rock sugar(I used 150 gm organic cane sugar) or to taste
  • 6 Pandan leaves, knotted
Method
  1. Soak the peach resin in a lot of water for 12 hours or preferably overnight.  The peach resin will expand to about 8 to 10 times after soaking.   Remove the impurities and rinse the jelly like peach resin, let drain on a sieve, set aside.
  2. Soak the snow fungus for a few hours and remove the hard stem, snip into smaller pieces, rinse, set aside.
  3. Bring water, snow fungus, red dates and pandan leaves to a boil, for about 20 mins., then add in the peach resin and boil for another 20 mins., then add in the dried longan.  Simmer for about 10 mins.
  4. Stir in cane sugar to taste.
  5. Serve warm or chilled.
Note :  Peach resin is not recommended to pregnant ladies, ladies having their menstrual period and children below the age of two.

Herbal Jelly ~ Gui Ling Gao

H erbal Jelly ~ Gui Ling Ga o literally translated means 'Tortoise Jelly' is one of my family's favourite desserts.  It's much more economical to prepare this at home for you'll need to fork out between Rm 9 to Rm 11 for a bowl of this cooling dessert in any of those herbal tea outlets.  This soothing jelly, served chilled, is supposed to be able to help reduce our body heat, helps to get rid of toxins and is believed to be good for the skin thus culminating a healthier complexion.

Durian Butter Cake ~ 榴莲牛油蛋糕

  It's the durian season again and I'm sharing with you a simple yet fragrant Durian Butter Cake.  This recipe does not use the traditional butter totally, in fact there is oil too.  Liquid oil tends to make the cake softer and stays moist longer as it does not solidify at room temperature.  This cake is soft and moist with a tinge of durian flavour and aroma.  A breakfast or Tea time snack for durian lovers. Durian Butter Cake ~  榴莲牛油蛋糕 Ingredients 150 gm unsalted butter 190 gm plain flour 2 tsp baking powder 30 ml vegetable oil 85 gm caster sugar 3 'L' eggs 130 gm pureed durian flesh 4 Tbsp milk a pinch of salt 1/4 teaspoon vanilla Method Sift flour with baking powder and salt.  Set aside. Beat butter with sugar till well blended, add in oil and continue beating till pale and fluffy. Add in eggs one at a time, mix well. Add in pureed durian flesh, mix till well incorporated. Sift in again the sifted flour in 2 batches, alternating with the milk.  Fold in till well inc
