Sweet Potato Chicken Pie

I've made pies with potatoes before but haven't tried with a mix of potatoes and sweet potatoes.  Spotted this recipe from a Coles magazine which spurred me to give it a try.  It wasn't bad really.  I think that the sweetness of the sweet potatoes did blend well with the savoury filling.  All in all, a comforting one-dish meal for my family. Recipe for Sweet Potato Chicken Pie ( adapted from a Coles magazine with modifications ) Ingredients 400 gm sweet potatoes 400 gm potatoes 650 gm chicken fillet, cubed 1 onion, cubed 4 cloves garlic, chopped 1 carrot, cubed 1 capsicum, cubed 3  tsp chicken granules 2.1/2  tsp mixed dried herbs 1.1/2 cups water 2 Tbsp cornflour + 2 Tbsp water to thicken Sugar, salt and pepper to season the chicken fillet Method Season the chicken fillet with some salt and pepper, set aside. Walnut Tart

Walnut Tart ~ My first attempt at making tarts.  I  googled for an easy crust recipe to make the tart shell and after watching a video from Joyofbaking.com., set out to experiment.  I was overjoyed when the tarts came out well but on scrutinising them further, found that the edges were  thick.  Nonetheless,  the tarts were yum and my family loved it! See the thick edges .... never mind more crust to munch on!   Will definitely try to improve. Recipe for Walnut Tart  ( Sweet crust pastry adapted from Joy of Baking.com) Ingredients for Sweet Crust Pastry  210 gm plain flour  1/8 tsp salt 113 gm butter/margarine 50 gm sugar 1 egg Egg white to seal the crust  Method Whisk the plain flour and salt, set aside.  Beat the butter till softened, add in sugar and beat till light and fluffy. Chicken Pot Pie

This is a cheat version of Chicken Pie with an Oriental twist.  I call it 'cheat' because the pastry is store bought, 'Oriental', as  I cooked the filling with Asian sauces.  This was our family's dinner and all of us enjoyed it thoroughly...... another one-dish meal!

Shepherd's Pie

Made this simple pie, sometimes referred to as a 'peasant dish' ..... easy, just pile up mashed potatoes over a bed of cooked meat and vegetables, leftovers also can be put to good use.  But, mine is not from leftover meat, or leftover mashed potatoes,  all freshly  cooked  specially for this pie, and with a touch of Oriental flavour.
