Steamed fish fillet


This is as simple as A,B,C ...... plain steamed fish fillet.  Quick and easy to lay on the table and  healthy and nutritious too!  Non-greasy and less washing up!




This steamed fish pairs well with plain rice or congee, any time!

Ingredients
  • 300 gm red snapper fillet
  • 4 pips garlic - chopped
  • 10 gm ginger - chopped
  • 1  Tbsp oil
  • 1  tsp each of - light soya sauce and oyster sauce
  • a pinch of sugar
  • Sea  salt
  • Spring onions for garnishing
  • Dash of pepper
Preparation
  1. Wash the fish fillet, pat dry and rub in some sea salt and pepper.  Set aside.
  2. Saute the chopped garlic and ginger with the oil till fragrant.  Mix the oyster sauce and light soya sauce with 2 tsp warm water, bit of sugar and add into the garlic ginger, stir well.  Set aside.
  3. Prepare a steamer with water and steam fish over rapidly boiling water for about 8 mins.
  4. Pour the garlic and ginger sauce over the fish, garnish with the chopped spring onions, add in a dash of pepper.
  5. Serve hot immediately.

  3. Wow...that's such a fresh piece of fish....very delicious steamed. I wish I can get that here. I miss the fresh ikan tenggiri too. Looks like I just have to be happy with cod or salmon...my 2 favourite fish here.

    Yes, especially the 'round garoupa', a piece depending on size can come up to 8 to 10 rgt. As you say, like eating gold. My fishmoger says that fish fillet and whole fish are priced differently!

    Ling Cod is a fish unique to the west coast of USA & Canada. Hence, the availability and reasonable price (USD5.50 per pound) in seattle. Its a white fish but not belonging to the cod family. However, it looks similar to a cod, hence the name.

Choc-chip raisin tea bread

This choc-chip tea bread is not too sweet and is suitable for tea as the name suggests.  Added in some orange rind for more flavour, not forgetting the walnuts that made it nutty .... munch, munch!

Bunga Telang ~ Blue-pea Flower Snow Skin Mooncakes ~ 2013

For a change, I tried  using a premix to make these Snow skin mooncakes and for colour opted to go natural and use the Bunga Telang or Blue-pea flower.   Indeed the purple colour from the flowers was very distinct on its own but once mixed with the flour, I was rather disappointed. It turned out to be blue instead of purple.  Well, the consolation is that the colour is natural.   Taste wise, I would still prefer to make the Snow skin from scratch rather than use a premix. Recipe for Bunga Telang ~ Blue-pea Flower Snow Skin Mooncakes Ingredients 250 gm of QQ Snow mooncake premix (1 packet is 500 gm)  14 gm shortening Bunga Telang/Blue pea flower 220 ml water Pandan and Lotus mooncake paste 25 gm melon seeds, lightly toasted to be mixed into the paste Method ( as per instructions on the packet ) Wash the Bunga Telang and boil with 220 ml water, once boiled, discard the flowers and ...
