Herbal Chicken


This is steamed whole chicken with Chinese herbs and sauce.  Steaming the chicken wrapped in foil, helps to retain the natural juice from the chicken thus enhancing the taste.  Tasted somewhat like the Salted Baked Chicken except that this is wet with more gravy!




Place the herbs and sauce in a small pot, bring it to the boil, leave to cool.
Spoon this sauce over and inside the chicken before wrapping in the foil.


Chicken after steaming for about an hour.
I prefer to put the chicken under the grill for a good 3 mins. to get the slightly singed texture.








This gravy will pair very well with a bowl of hot white rice ..................  Enjoy!

Ingredients
  • 800 gm free range chicken, head and legs removed
  • 10 gm  Dong Quai/Angelica Sinensis 
  • 10 gm Kei Chi/Wolfberries
  • 10 red dates, seeded and cut
Seasoning
  • 1/2 tsp salt
  • 1 tsp each of - sugar and light soya sauce
  • 2 tsp oyster sauce
  • 1/2 cup water
Preparation
  1. Clean the chicken, pat dry and rub in some salt, inside out, keep aside.
  2. In a small pot add in 1/2 cup water, dong quai, red dates and all the seasoning, bring to a boil and toss in the washed kei chi/wolfberries.  Leave to cool.
  3. Prepare a steamer to steam the chicken.
  4. Slowly spoon the seasoning into the cavity and over the whole chicken, wrap up the chicken in foil.
  5. Put the wrapped up chicken on a steamer rack.  Steam under rapidly boiling water for about an hour or more, depending on the size of the chicken.
  6. Open up the foil, test for doneness by pricking on the chicken thigh with a fork, to see whether there's any blood coming out.
  7. Put the chicken under the grill for about 3 mins.
  8. Cut up the chicken with a pair of kitchen scissors.
  9. Serve hot with rice.

  8. I love this with rice! Another simple and delicious dish for dinner. I normally used the leftover to make porridge for the next day. Included the gravy! Yummm.... Hope you're enjoying your day.

  9. I love this steaming with foil..it helps to retain the moistness of the chicken and like you say enhanced the flavor more :) Great clicks...makes me salivate. After a hard day at work..with this waiting for me at home is a dream :)

  18. Great dish! I usually do this the easier way - dump all the herbs, chicken pieces and sauces on a plate and steam straightaway. Will try your method one day soon since my MIL will be staying with us soon and she sure need all those goodness that your method will provide! :)

Chestnut Chiffon Cake

I made this Chestnut Chiffon Cake after reading the post from Honey Bee Sweets blog but mine is devoid of any 'make up' and is a plain Jane.  Nevertheless, the texture of this chiffon is soft, moist and fluffy and I can indulge more on this cake as it's so light and can hardly fill my tummy even after devouring 3 slices :) Recipe for Chestnut Chiffon Cake (adapted from ' here' ) Ingredients (A) 4 egg yolks 70 ml water 70ml vegetable oil 125 gm chestnut )  Puree 40 ml milk          ) 100 gm superfine flour (B) 4 egg whites 80 gm caster sugar Method In a blender puree the chestnuts with the milk, set aside. Char Siew Pau ~ 蒸叉烧包

I have been itching to try out a Pau recipe and vaguely remember that I did make it once, long, long ago.  So I  got hold of my old file of recipes and finally managed to retrieve it.  I did it recently and must say that I'm satisfied with the result.  The texture of the Pau was soft and a bit chewy, wholesome and filling too.  Naturally, they didn't look so nice and round like the ones sold in the dim sum restaurants, but nonetheless I think homemade ones can be just as delectable as well.
