Carrot Walnut Cake with Spelt Flour ~ 胡萝卜核桃蛋糕

This is my first attempt at baking with spelt flour and I was quite skeptical at the beginning for I do not know how the texture of the cake will turn out.  But after reading through the recipe which calls for about half spelt and half self-raising flour, I have more confidence to give it a go.  Spelt is low in gluten and perhaps that's the reason why the recipe calls for only half spelt flour.  The cake turned out swell and the texture was good, soft and moist.



Carrot Walnut Cake with Spelt Flour ~  胡萝卜核桃蛋糕

Ingredients
  • 115 gm wholemeal spelt flour
  • 113 gm self-raising flour
  • 140 gm soft or dark brown sugar
  • 4 large eggs
  • 70 gm walnuts, chopped
  • 70 gm sultanas, chopped
  • 300 gm (about 2 medium size) carrots, grated
  • Zest from 1 orange
  • 1 cup vegetable oil
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • a pinch of salt
  • Icing sugar for dusting (optional)
Method
  1. Line an 8 inch square pan with parchment paper.
  2. Sift self-raising flour with baking powder, salt.  Whisk in the spelt flour to mix well.
  3. In a mixing bowl, whisk eggs, oil and sugar till creamy.
  4. Fold in the flour mixture in 3 batches, mix well.
  5. Mix in the chopped walnuts, sultanas and orange zest, mix well.
  6. Finally add in the shredded carrots.  Mix till well incorporated.
  7. Pour batter into the prepared pan, level the surface.
  8. Lightly tap the pan on the work top.
  9. Bake in a preheated oven @ 180 deg.C for about 45 to 50 mins.  Test with a skewer till it comes out clean.
  10. Remove from oven and let cool in pan for about 10 mins. before removing and cooling it completely on a wire tray.
  11. Dust with icing sugar before serving, if desired.

Ingredients

150 gm minced pork2 chicken eggs -  100 ml without shell150 ml boiled, cooled water  (Ratio is 1:1.5)1/4 tsp saltsesame oil, pepperlight soya sauce to tasteMethod Season the minced pork with some salt.Whisk the eggs with water, strain it onto a plate.Mix in the seasoned minced pork.  Remove any air bubbles.When the water in the steamer is boiling, place the plate of eggs onto the steamer plate, close lid and turn the heat to the lowest.Steam for about 14 to 15 mins., check after 5 mins.  Jiggle the plate, if centre is wobbly, it's done.Remove from steamer, garnish with some spring onions, light soya sauce, sesame oil and a dash of pepper.


Prawn Omelette

This is a very simple and quick universal dish, common in most households.  It will certainly come in handy if you have unexpected guests who stay for dinner.










Recipe for Prawn Omelette


Ingredients

120 gm Prawns
2 Big Onions  -  sliced
3 Large Eggs
1 Teasp Light Soya Sauce
Oil for frying

Seasoning for Prawns

1/2  Teasp Salt
1  Teasp Sugar
Dash of  Pepper

Method

Lightly beat up the eggs with the light soya sauce
Heat up the pan with some oil
Saute the sliced onions with the seasoned prawns
Dish out
Pour the beaten eggs onto the pan
Add in the prawns and onions
Once the bottom is brown, flip omelette
and brown the other side
Dish up and serve

Fantastic Chicken/Chicken in black bean sauce ~ 豆豉鸡

This is a copycat dish from Old Kingdom Chinese restaurant in Surrey Hills, Melbourne.  When we saw 'Fantastic Chicken' dish on the menu, all of us were curious and yes, we agreed to give it a shot.  When the dish was served, there's nothing 'fantastic' about it, it's just chicken fillet fried with black bean sauce.  Nonetheless, it was a delicious and tasty dish to pair with a plate of steaming hot white rice.

Ingredients

270 gm chicken leg, deboned2 onions, sliced or cut into wedges1 medium size capsicum, sliced1.1/2 tsp black bean Salt and a bit of sugar to taste1 tsp cornflour + 3 tsp waterMethod Slice up the chicken and season with some pepper, pinch of salt and a bit of sugar.  Set aside.Heat up a wok or pan with some oil, add in the black bean , saute till fragrant, add in the seasoned chicken and stir-fry till cooked.  Add in some water if  it's too dry.Toss in the onion and capsicum, stir-fry.Fine t…
