Diamond Head



This is a picture of Diamond Head, and does the name ring a bell to anyone? Diamond Head is the most famous volcanic crater in the world and is located on the south-east coast of O'ahu at the end of Waikiki overlooking the Pacific Ocean. Yes, I went to Hawaii and it was one of the most fabulous holiday that I ever had. Really had a fantastic time there, eating - savouring all the different types of food , fusion, Japanese, Korean, western, Thai, Vietnamese and last but not least their Hawaiian local food. Sight seeing - exploring Maui island and Haleakala, submarine dive. lavender farm and shopping at the Waikele Premium Outlets and Ala Moana shopping mall in Honolulu, the largest in Hawaii. This is my 2nd visit to Hawaii and the first was way back in 2007 and at that time I had not started blogging yet. So this time around I jumped on every opportunity to take as many pictures as I can to share with you, especially the food, glorious food .......

Our first meal on Aloha soil was at  Highway Inn for a taste of the local Hawaiian food and below are some pictures of the interior.

This is Kalua Pig combo - rice, kalua pig, lomi salmon (orange coloured), some sort of an appetiser, pipikaula or beef jerky and dessert is the white haupia made with coconut milk, tasted something like our local kuih.



This is Lau Lau combo - lomi salmon, pipikaula, haupia, rice and the authentic Hawaiian food, Lau Lau.  Lau Lau is a combination of pork, chicken with some butter fish, wrapped in taro leaves, then tied inside 2 ti-leaves and either steamed or pressure cooked.  In the above picture, the ti leaves have been removed as they're not edible.




Dinner was at Palazzo Ristorante Italiano located at 99-080 Kauhale St., # C 2 & 3, Aiea, Hawaii 96701:  Phone no. 808-485-8688 and this restaurant doesn't have a website yet.   All the dishes we ordered came with pasta in generous portions.



Seafood Pasta  -  sauteed calamari, jumbo shrimps, fresh Manila clams, mussels, scallops, prepared with white sauce.


Chicken Alla Marsala -  lightly breaded chicken breast, topped with mushrooms in butter marsala wine sauce.




Osso bucco combo - braised veal shank with onions and mushrooms.



Fish Arrabiata - fresh fish sauteed with garlic, ham and bacon in a spicy tomato sauce.




Not forgetting the daily baked fresh bread which was complimentary!

    1. Spices? Never thought of that. It's very difficult to get spices for our curries, had to surf the net and only managed to find a small Indian shop selling spices in a very tiny nook of the town. Can't even find the M'sian curry pastes in the supermarkets. A lot of Japanese food stuff though.

Char Siew Pau ~ 蒸叉烧包

I have been itching to try out a Pau recipe and vaguely remember that I did make it once, long, long ago.  So I  got hold of my old file of recipes and finally managed to retrieve it.  I did it recently and must say that I'm satisfied with the result.  The texture of the Pau was soft and a bit chewy, wholesome and filling too.  Naturally, they didn't look so nice and round like the ones sold in the dim sum restaurants, but nonetheless I think homemade ones can be just as delectable as well.

  Sang Ji Sheng or Taxilli twig is also known as mulberry mistletoe. Traditional Chinese Medicine (TCM) recommends this tea as it has many health benefits, like lowering blood pressure, strengthening bones and tendons, increasing coronary blood flow, suppressing tumour growth amongst many others. This Sang Ji Sheng tea is an inexpensive but healthy tea and you can serve it as a dessert or to enjoy at any time of the day.  The concoction of Sang Ji Sheng tea is easily available from Chinese medical shops.  Some of the coffee shops here do have this tea on their menu but homemade is more authenic and affordable. Chestnut Chiffon Cake

I made this Chestnut Chiffon Cake after reading the post from Honey Bee Sweets blog but mine is devoid of any 'make up' and is a plain Jane.  Nevertheless, the texture of this chiffon is soft, moist and fluffy and I can indulge more on this cake as it's so light and can hardly fill my tummy even after devouring 3 slices :) Recipe for Chestnut Chiffon Cake (adapted from ' here' ) Ingredients (A) 4 egg yolks 70 ml water 70ml vegetable oil 125 gm chestnut )  Puree 40 ml milk          ) 100 gm superfine flour (B) 4 egg whites 80 gm caster sugar Method In a blender puree the chestnuts with the milk, set aside. In a mixing bowl, add egg yolks, water, oil and mix well.  Add chestnut puree and mix well. Sift in the flour, mix till free of lumps. Beat egg whites, gradually add sugar and beat till soft peaks form but not dry. Add egg whites into egg yolk mixture in 3 portions. ...
