Green tea ping pei (snow skin) mooncake ~ 2012

reen tea ping  pei aka snow skin moon cake is my favourite among the wide range of ping pei mooncakes available in the market.  I'm glad that I still managed to squeeze in some time to make this.  Home made ones are always the best and the most economical.














Recipe for Green tea ping pei mooncake

    Ingredients for Pastry skin
    • 100 gm koh fun (fried glutinous flour) and some extra for dusting
    • 100 gm icing sugar
    • 32 gm shortening
    • 125 ml ice cold water
    • 3/4  teasp green tea powder
    Filling
    • 500 gm green tea paste
    • 25 gm melon seeds, lightly toasted   
    Method
    1. Boil the water with green tea powder, mix well, cool and keep refrigerated till required.
    2. Sift koh fun and icing sugar into a mixing bowl.  Mix well.
    3. Add and rub in shortening till resembles bread crumbs.
    4. Gradually add in the chilled green tea water and mix till just combined, to form a ball of dough. (Overmixing will result in a rough piece of dough).
    5. Cover and let the dough rest for 10 to 15 mins.
    6. Mix the green tea paste with the melon seeds and weigh out portions of 35 gm each.  Shape into balls.
    7. Scale the dough into 25 gm portions, shape into balls.
    8. Flatten the dough and wrap each portion around a ball of filling.  Lightly roll on a bit of koh fun.
    9. Dust moon cake mould with koh fun, shake off any excess, press the prepared portion of dough into the mould.  Press out.
    10. Keep mooncakes in an air-tight container but place a piece of kitchen paper over the cakes to prevent moisture from the cover from dripping onto the cakes.  Cover and keep refrigerated overnight. 
    11. Yield :  15 ping pei mooncakes. 
 Note :  These mooncakes stay soft for 4 to 5 days, covered and chilled.

  2. Hi Cheah, yes homemade ones are better, more economical. We can mix and match the flavours we like in one piece. I love the green tea colour/flavour but I can't make them cos' my recipients don't like this flavour. Myself, I love mixed nuts mooncake most.

  5. I love your green color. Very refreshing. I have almost similar ping pei recipe as yours, but it gets hardened in the fridge the next day. Do you have similar problem ?

    1. Keep them in a container with a cover and place on the bottom shelf of the fridge. Take them out a bit early and consume at room temperature. Mine stayed soft for 4 to 5 days. Perhaps you've overmixed the dough which can result in a rough and rather hard texture.

  10. Looks amazing, Cheah! Totally agree homemade ones are better, but I haven't had the time to try making them yet =( Pretty sure my brother would be more than happy to devour this green tea one - he loves green tea flavour! hehe.

Mui Choy is preserved mustard greens and there are two types, one is salty while the other is sweet.  There are many ways of cooking mui choy with pork belly.  Instead of braising, you can steam it with minced pork but here I am using only the sweet mui choy and I braised the pork belly with it.  This is a flavourful dish and you can serve it with plain rice or plain porridge. Braised Pork Belly with Mui Choy   ~    梅菜焖五花肉 Ingredients  400 gm pork belly cut into bite size 100 gm  preserved sweet mui choy 3 cloves of garlic 2 slices ginger Seasoning for the pork belly 1 Tbsp dark soya sauce 1/4 Tbsp sugar 1/4 Tbsp sesame oil 1/4 Tbsp oyster sauce 1/2 tsp pepper 1/8 tsp light soya sauce Method Season the pork belly for about an hour or more.  Set aside. Soak the mui choy for 45 mins., rinse and squeeze dry.  Cut into slices Heat some oil in the wok, fry the mui choy.  Add in the ginger slices.  Stir-fry. Add in the pork  belly, fry for a while and

Steamed minced Pork with Mui Choy ~ 梅菜蒸猪肉

This is a homey, comforting dish which you can never find on the menu of a Chinese restaurant.  Perhaps you may find it in an economy rice stall.  There are two types of Mui Choy (梅菜) or preserved mustard, one is salty while the other is sweet and in this recipe, I used the latter.  The Mui Choy lends flavour and aroma to the dish and most often is paired with pork, either minced or pork belly chunks.  In this recipe, the minced meat must be with a bit of fat, otherwise the dish will turn out dry and dense.  Give this a try and see whether you like it or not. Steamed Minced Pork with Mui Choy ~  梅菜蒸猪肉  Ingredients  320 gm minced pork with a bit of fat 70 gm sweet mui choy (preserved sweet mustard green) Seasoning for minced pork 1 tsp sesame oil 1 tsp Shaoxing wine 1/2 tsp light soy sauce 1/2 tsp sugar 1 Tbsp oil 2 Tbsp cornflour 3 Tbsp water Method Marinate the minced pork with the above seasoning and stir the pork in one direction, till sticky.  Set
