Mixed Fruit Ring




I was thrilled when I removed this fruit ring from the oven ...... mmmm  sweet smell of cinnamon.  This tasty fruit ring does not require any butter or spread to go with it and I prefer to eat it on its own..... but accompanied by a hot cup of my favourite 'Kopi 'O'!



Roll up the dough, form into a ring and cut 2/3 through at 1 inch intervals, cover to prove.
After proving for 30 mins., apply honey and egg mixture, sprinkle on brown sugar, cinnamon and nibbed almonds.











 Warm, crusty and nutty loaf, straight from the oven ...........

Ingredients  (A)
  • 300 gm high protein flour
  • 50 gm superfine flour
  • 1/4  tsp salt
  • 15   gm skimmed milk powder
  • 50 gm caster sugar
  • 25  gm butter/margarine
  • 1 egg lightly beaten
(B)
  • 1.1/2  tsp yeast     
  • 150 ml  lukewarm  water
  • 1 tsp sugar
(C)
  • 1 egg  +  1  Tbsp honey  (beat together)
  • 4  tsp brown sugar
  • 1/2  tsp cinnamon
  • 120 gm  sultanas, dried cranberries and dried pineapple, coarsely chopped
  • Some nibbed almonds to sprinkle
Method
  1. Sift flours together, mix in salt, milk powder and sugar.  Mix with the dough hook for about 10 secs.
  2. Combine lukewarm water with yeast, sprinkle in the sugar, stir till dissolved.  Let rest for 10mins. for it to ferment.
  3. Pour the frothy yeast mixture into the dry flour mixture, add in the egg and butter.
  4. Beat on slow for about 10 to 15 mins. till a pliable dough is formed and the dough leaves the sides of the bowl.
  5. Remove the dough hook, cover the mixing bowl with a damp cloth and let it prove in a warm place till double in bulk, about 1 hour.
  6. Dough is ready for shaping when an indentation is left after pressing with a finger.  Place dough on a lightly floured surface, give it a gentle knock to expel some air.
  7. Roll out into an oblong about 9 x 18 ins., spread a layer of honey and egg mixture.  Sprinkle 2 tsp of brown sugar, the dried fruits and cinnamon powder.
  8. Roll the dough up tightly beginning at the wide side and seal by pinching the edges together.
  9. Place the roll on a greased or paper lined baking sheet, forming it into a  ring  and join the ends together.  Cut 2/3 through the ring @ 1 inch intervals.
  10. Cover with a damp cloth and let prove for about 30mins.
  11. Apply the balance of honey and egg mixture, sprinkle on the remaining 2 tsp of brown sugar, cinnamon and some nibbbed almonds.
  12. Bake in preheated oven @  180 deg C for about 15 to 20 mins. or till golden brown.
  13. Let cool on wire rack.

  9. This bread looks so goooood and the recipe seems "doable". Not having any experience in bread making I do have one question though, can I just use plain bread flour only? Thanks.

    After you have rolled out the dough, sprinkled on the filling, then you start to roll up from the shorter end, breadth wise, then the roll will be fatter. Shape it and gently place on the paper lined baking tray. Then only you cut.

    Yes, you can use bread flour. Bread flour, high protein is the same. There's another type called '00' flour from Italy, also good. Thanks for dropping by!

Braised Pork Belly with Mui Choy   ~    梅菜焖五花肉 Ingredients  400 gm pork belly cut into bite size 100 gm  preserved sweet mui choy 3 cloves of garlic 2 slices ginger Seasoning for the pork belly 1 Tbsp dark soya sauce 1/4 Tbsp sugar 1/4 Tbsp sesame oil 1/4 Tbsp oyster sauce 1/2 tsp pepper 1/8 tsp light soya sauce Method Season the pork belly for about an hour or more.  Set aside. Soak the mui choy for 45 mins., rinse and squeeze dry.  Cut into slices Heat some oil in the wok, fry the mui choy.  Add in the ginger slices.  Stir-fry. Add in the pork  belly, fry for a while and

Steamed minced Pork with Mui Choy ~ 梅菜蒸猪肉

This is a homey, comforting dish which you can never find on the menu of a Chinese restaurant.  Perhaps you may find it in an economy rice stall.  There are two types of Mui Choy (梅菜) or preserved mustard, one is salty while the other is sweet and in this recipe, I used the latter.  The Mui Choy lends flavour and aroma to the dish and most often is paired with pork, either minced or pork belly chunks.  In this recipe, the minced meat must be with a bit of fat, otherwise the dish will turn out dry and dense.  Give this a try and see whether you like it or not. Steamed Minced Pork with Mui Choy ~  梅菜蒸猪肉  Ingredients  320 gm minced pork with a bit of fat 70 gm sweet mui choy (preserved sweet mustard green) Seasoning for minced pork 1 tsp sesame oil 1 tsp Shaoxing wine 1/2 tsp light soy sauce 1/2 tsp sugar 1 Tbsp oil 2 Tbsp cornflour 3 Tbsp water Method Marinate the minced pork with the above seasoning and stir the pork in one direction, till sticky.  Set
