Italian Apple Cake



I was inspired by Ann to attempt this Italian Apple Cake as I was hooked when I saw the layers of apple in her cupcakes.  I didn't make cupcakes though but pour all the batter into a springform pan to make a whole cake instead.  I waited eagerly for the cake to cool before cutting it up to see how the apples will appear and was delighted with the result.  Thanks for sharing this recipe, Ann.








 







This is a cake for all occasions and serves well with a pot of plain hot  tea.  To make this whole cake, I made 1.1/2 of  the following recipe.

Recipe for Italian Apple Cake  (Adapted from Anncoojournal)

Ingredients 
  • 270 gm butter
  • 200 gm caster sugar
  • 270 gm plain flour
  • 3/4  tsp  baking powder
  • 1.1/2 tsp cinnamon
  • 3/4 tsp vanilla
  • 6 green apples, cored and sliced with skin intact
  •  4.1/2  eggs, lightly beaten
Method
  1. Cream butter, sugar and vanilla till light and creamy.
  2. Add in eggs little by little.
  3. Fold in the sifted flour, cinnamon and baking powder by hand.
  4. Add in the sliced apples and mix well into the flour mixture.
  5. Pour the batter into a lightly greased and flour dusted 23 cm springform pan.
  6. Bake for 50 mins., till golden brown and use a skewer to test if it comes out clean.
  7. Remove from oven, let cool in pan before unmoulding and cooling it completely on a wire rack.

Lavender lemon cookies ~ 薰衣草柠檬曲奇

These dainty looking Lavender lemon cookies have a subtle taste of lavender, not too much for I used  fresh leaves instead of dried flowers.  They are buttery, taste like shortbread with a light floral aroma.  They are simple, cute and sure to impress.  Try gifting them at a Christmas cookie swap or great to give as a gift during the coming festive season.


Lavender lemon cookies ~  薰衣草柠檬曲奇
Ingredients

263 gm butter80 gm caster sugar245 gm plain flour50 gm cornflour2.1/2 Tbsp icing sugar1.1/2 Tbsp freshly snipped lavender leaves1 tsp lemon zesta pinch of saltMethod Sift plain flour with the cornflour, set aside.Cream butter, sugar and icing sugar till fluffy.Mix in the snipped Lavender leaves and lemon zest.Mix in the sifted flour and cornflour mixture.Wrap up the dough with cling wrap and keep chilled for an hour or more.Roll the dough into 1/4 inch thick and cut with cookie cutter.  (Alternatively, roll into a log and cut into 1/4 inch thick).Place cookies onto a parchment lined baking …
