Walnut and Date Biscotti


There's  neither oil nor fat in this Biscotti and with reduced sugar, one can pamper oneself with  a few extra pieces without feeling guilty and worrying over the waistline.  Dunk them into either hot coffee or tea ...... enjoy!






Recipe for Walnut and Date Biscotti  (adapted from  'here' with slight modification)

    Ingredients

    • 100 gm caster sugar
    • 2 eggs
    • 1  tsp vanilla
    • 1  tsp baking powder
    • 1/4  tsp salt
    • 230 gm plain flour
    • 60 gam walnuts, coarsely chopped
    • 75 gm dates, chopped
    Method
    1. Beat sugar and eggs on high speed till thick, palte and fluffy.  Add in vanilla.
    2. In a separate bowl, whisk together the flour, baking powder and salt, mix well.
    3. Add to the egg mixture and beat till well combined.
    4. Fold in chopped walnuts and dates.
    5. Transfer dough to a well-floured suraface and toll into a log, about 12 inches long and 3.1/2 inches wide.
    6. Place log onto a parchment lined baking tray and bake @ 180 deg C for 20 to 25 mins. or till firm to the touch, slightly golden.
    7. Remove from oven and let cool on a wire rack for about 15 mins.
    8. Transfer log to a cutting board and cut into 1/2 inch diagonal slices.  Place Biscotti, cut side down, on the baking sheet.  Bake @ 165 deg C for 8 to 10 mins., turn slices over and bake for another 8 - 10 mins. or till golden brown.  Remove from oven and let cool.  Store in air tight container.
    9. Yield 20 to 24 Biscotti.

  5. I have only made biscotti once and remembered having to finish them all myself as my boys do not like biscuits lol! These looks nice, maybe I should bake another batch and eat them for lunch at work:D

Hazelnut orange mini Bundt

Upon going through my cake pans and trays I realised that I had neglected this mini Bundt pan for quite a while.  Hmmm, time to take it out and make use of it.  These mini Bundts were soft and moist with a nutty texture and weren't overly sweet, just right for breakfast or to serve for tea.  The ingredients are a slight resemblance to that for Friands. Recipe for Hazelnut orange mixed fruit mini Bundt Ingredients 180 gm melted butter 75 gm plain flour 150 gm icing sugar 150 gm hazelnut meal 2 tsp finely grated orange rind 5 egg whites 80 gm dried cranberries (chopped) Icing sugar for dusting Method Sift flour and icing sugar into a mixing bowl. Add hazelnut,orange rind, stir to combine. Place the egg whites into a bowl and whisk with a ball whisk till lightly frothy. Add in the hazelnut mixture and stir to combine.
