Red Bean Sweet Soup with 'Nian Ko' ~ 红豆年糕糖水


I'm a fan of Red Bean Sweet Soup aka 'Hoong Tau Sar' but this time I added in some bits of  Chinese New Year 'Nian ko'  on the recommendation of a friend.   I'm glad that I've found another way to make use of this 'Nian ko' other than the usual way of deepfrying them with sweet potato and taro.  This is a delicious dessert which can be served at any time of the day and I enjoy mine, served warm!






Recipe for Red Bean Sweet Soup with 'Nian Ko' ~   红豆年糕糖

Ingredients

  • 300 gm red beans
  • 100 gm 'nian ko', cut into cubes (not freshly made 'nian ko')
  • 30 gm dried longan
  • 2.1/2 to 3 lt of water, as desired
  • 5 pcs of dried mandarin orange skin
  • Rock sugar to taste
Method

  1. Wash the red  beans, cook them in a pot with 2.1/2 lt of water, add in the dried mandarin orange skins.
  2. When the red  beans are soft, add in the rock sugar and the dried longan.  Fine tune to desired taste.
  3. Mix in the 'nian ko' cubes and turn off the heat.  Let the 'nian ko' soften a little.
  4. Ladle onto bowls to serve.

  1. This is new to me. I like red bean and I like nian ko. It sounds good to me to mix them tog so I can double like! Thanks Cheah, but I have to wait till CNY to buy the nian ko first.

  8. I like red bean soup, but adding in nian ko is the first for me, an addition of a chewy texture in the soup sounds yummy! A pity here confirm don't have nian ko, so I'd have to wait until I go back to SG then I can try this!

  11. I think this is similar to Japanese 'zenzai'. I love it when I was little and I still do but try not to have it too often for diet reason. I get craving when I see the photo of zenzai in magazine or someone's blog...ha ha ha. Looks so tempting!

Chocolate chip banana bread ~ 香蕉巧克力蛋糕

This is an easy peasy recipe where no mixer is required.  Method is more or less like making muffins.  The texture of this banana loaf is soft, moist and there is a perfect blend between the aromatic bananas and chocolate chips.

Ingredients
1/4 cup oil100 gm caster sugar1 tsp lemon/orange zest2 large eggs, lightly beaten1/2 cup choc chips188 gm plain flour1 tsp bicarbonate of soda1/2 tsp salt1 cup (about 300 gm) over-ripe bananas, mashed (about 3)1/2 cup walnuts, coarsely chopped (optional)Extra choc chips to sprinkleMethod Grease and flour a 8.1/2" x 4.1/2" loaf pan.Whisk flour, bicarbonate soda, salt and sugar.  Set aside.Mash the bananas and mix in oil and beaten eggs.Pour the wet ingredients into the flour mixture.Stir in choc chips.  Do not overmix.Spoon batter into the loaf pan.  Level the surface and sprinkle on some choc chips.Bake in a preheated oven @ 180 deg.C for about 45 to 50 mins. Test with a skewer till it comes out cle…

Topo Map Cake ~ 地图蛋糕

I think it is more appropriate to name this cake just as 'Topo map cake' for the layers in this cake really look like a map.  Layering this cake can be quite challenging as a great deal of patience is required.  But patience and endurance do pay and after the cake is baked and once you sliced it up, you'll be so pleased to see the pretty layers and the colour combination.  Not only does it look awesome, the texture is good too, soft and moist.

A)  250 gm salted butter
      100 gm caster sugar
      4 large egg yolks
      200 gm self-raising flour
      60 ml milk
      1 Tbsp matcha powder, sifted
      1 tsp vanilla
      Cocoa powder for dusting
B)  4 large egg whites
      50 gm caster sugar
