Stir-fry Razor clams with mixed vegetables


This is a quickie and easy veggie dish that I whipped up for the 'Winter Solstice' dinner ........ 'Stir-fry Razor clams with mixed vegetables'.










These razor clams are real yummy..... chewy and tasty.  Together with the crunchy capsicums and cauliflower , they do complement each other ..............  Mmmmm!

Ingredients
  • 200 gm canned razor clams (about 1/2 a can)
  • 1 red and 1 green capsicums
  • 100 gm cauliflower
  • 4 pips garlic, chopped
  • 1  Tbsp Shaoxing wine
  • Some stock from the razor clams
  • 1 tsp cornflour +  stock to thicken
  • Salt  and a bit of sugar to taste
Preparation
  1. Take out the razor clams, and leave the stock aside.
  2. Wash and cut up the capsicums and cauliflower.
  3. Saute the chopped garlic with some oil till fragrant.
  4. Toss in the  cauliflowers, stir-fry for a while, followed by the capsicums.
  5. Add in the razor clams and some stock, stir-fry.
  6. Thicken the gravy with the cornflour mixture, add salt and a bit of sugar to taste.
  7. Turn off heat, drizzle in the Shaoxing wine.
  8. Dish out and serve immediately.

  10. Very Christmas colour. I should be making this :) But then so tired and sleepy still. Have not cooked since I came back the day before. Hope you are having a great time there with your children. I'm sure the weather there is nice. We are covered in thick snow here. More bad weather coming :( Take care.

Black Bean Sauce Chicken ~ 黑豆酱鸡

  This is an easy peasy chicken dish to whip up in the kitchen which can pair well with plain white rice or plain congee.  Ingredients are not complicated and mostly available in the kitchen, but it's best to season the chicken first before stir frying them. Black Bean Sauce Chicken   ~   黑豆酱鸡 Ingredients 450 gm  chicken, cut into bite size (whole leg of chicken and breast) 2 tsp black bean sauce 4 pips of garlic, chopped 1 big onion cut into wedges 1 chilli, chopped 1 small Carrot, cut into slices Curry leaves Bit of sugar to taste Method Season the chicken with a pinch of salt. Saute the chopped garlic with the curry leaves and black bean sauce till fragrant. Add in the seasoned chicken, stir fry and sprinkle on some water if the dish is too dry. Simmer till chicken is cooked and tender. Add in the sliced carrot and onion wedges.  Fine tune to taste with a bit of sugar. Toss in the chopped chilli. Dish up to serve.
