Sweet Potato Chicken Pie


I've made pies with potatoes before but haven't tried with a mix of potatoes and sweet potatoes.  Spotted this recipe from a Coles magazine which spurred me to give it a try.  It wasn't bad really.  I think that the sweetness of the sweet potatoes did blend well with the savoury filling.  All in all, a comforting one-dish meal for my family.




Recipe for Sweet Potato Chicken Pie (adapted from a Coles magazine with modifications)

    Ingredients

    • 400 gm sweet potatoes
    • 400 gm potatoes
    • 650 gm chicken fillet, cubed
    • 1 onion, cubed
    • 4 cloves garlic, chopped
    • 1 carrot, cubed
    • 1 capsicum, cubed
    • 3  tsp chicken granules
    • 2.1/2  tsp mixed dried herbs
    • 1.1/2 cups water
    • 2 Tbsp cornflour + 2 Tbsp water to thicken
    • Sugar, salt and pepper to season the chicken fillet
    Method
    1. Season the chicken fillet with some salt and pepper, set aside.
    2. Wash the potatoes, cook in a pot of boiling water.  Drain, cool, peel and mash till smooth.  Mix in some salt, set aside.
    3. Heat some oil in a pan, saute the garlic till fragrant, add in the onions, carrot and capsicum, stir-fry.  Dish out and set aside.
    4. In the same pan, add some oil, stir-fry the seasoned chicken fillet, add in the water, simmer till meat is cooked.  Toss in the onions, carrot and capsicum.  Mix well, add in the cornflour thickening, chicken granules, fine tune to desired taste.  Sprinkle on some mixed dried herbs.
    5. Spoon mixture into 4 x 1 cup capacity ramekins, top with the smashed potatoes.  Place on a  baking tray and bake for 20 mins. till golden and bubbling.
    6. Serve immediately.

  9. I can see how this would work, Cheah. I made cod fish cakes the other night with both kinds of potatoes and it worked out really well. The sweet potatoes add a subtle sweet taste that is very interesting...Your meal looks so much better than mine did though. Mine fish cakes were messy, lol...

    1. I did fish cakes before, yes can be messy. Must try again but cod fish here is super expensive!

    2. I used leftover cod, not very much Cheah. I've been thinking about trying this method with canned tuna too, just for the heck of it!

    I never thought of adding sweet potato into a chicken pie but i always mix it into my malay curry puff filling though.

Char Siew Pau ~ 蒸叉烧包

I have been itching to try out a Pau recipe and vaguely remember that I did make it once, long, long ago.  So I  got hold of my old file of recipes and finally managed to retrieve it.  I did it recently and must say that I'm satisfied with the result.  The texture of the Pau was soft and a bit chewy, wholesome and filling too.  Naturally, they didn't look so nice and round like the ones sold in the dim sum restaurants, but nonetheless I think homemade ones can be just as delectable as well.

I have never tried baking cakes with raw pumpkin and was glad when Amy Beh shared a recipe for Pumpkin Carrot Cake.  The moist cake tasted good, the sweet pumpkin blended well with the slightly sourish cranberries.  I have reduced the sugar somewhat and tweaked the method too.  I'll be baking this again for the Chinese New Year.  This cake was an instant hit with my family ....... Try it!

Kai Chai Paeng aka Little chicken biscuit

K ai Chai Paeng or 'Little chicken biscuit' was one of my father's favourite item to take away whenever we stopped by Bidor, a small town south of Ipoh on the way to Kuala Lumpur, long ago before the North-South Highway came into existence.  Those days, Bidor's famous restaurant, Pun Chun ,was like a half-way house whereby travellers would stop by for their signature 'Ngap thui meen' or duck thigh noodles. Pun Chun restaurant is right in the middle of town along the main road and has been in operation for 70 years and their Kai Chai Paeng were of the thick, doughy type made with lard and some pork but now they also have the thin and crispy version. Another small town, known as Kampar which is nearer to Ipoh is also famous for their thin and crispy version of  Kai Chai Paeng.  However,  I'm not too sure which town is the originator of these 'chickenless', unique but absolutely aromatic 'Little chicken biscuit'.
