Chia Seed Banana Bread ~ 香蕉种子蛋糕


This moist Chia Seed Banana bread makes a great snack or a quick breakfast.  Loaded with chia seeds and lots of banana flavour, one can enjoy it with a cup of steaming hot coffee or tea.






Chia Seed Banana Bread ~   香蕉种子蛋糕
Ingredients 

  • 150 gm plain flour
  • 90 gm wholemeal flour
  • 1 tsp bicarbonate of soda
  • 2 'L' eggs
  • 3 Tbsp Chia seeds
  • 1/8 tsp salt
  • 55 gm caster sugar
  • 55 gm brown sugar (I used Muscovado sugar)
  • 300 gm over ripe bananas, mashed. (about 3 bananas)
  • 1/2 cup canola oil
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 1/3 cup Buttermilk (1/3 cup milk + 1 tsp vinegar or lemon juice)
  • 1 banana, slit into half
Method
  1. Line a 9 x 5 x 3 inch loaf pan with parchment paper, set aside.
  2. Mix the  buttermilk and let it sit for about 10 mins. or more.
  3. Whisk the plain flour, wholemeal flour, salt and bicarbonate of soda thoroughly.
  4. Add in the chia seeds and cinnamon.  Mix well.
  5. In another bowl, beat the eggs, caster sugar, muscovado sugar, oil, buttermilk and vanilla till well incorporated.  Add in the mashed bananas.  Mix till well combined.
  6. Make a small well in the flour mixture and gradually pour in the wet ingredients.  Mix till well incorporated but do not overmix.
  7. Pour batter into the prepared loaf pan, level the surface and place the two halves of banana on top.
  8. Bake in a preheated oven @ 170 deg.C for 50 to 55 mins. till golden brown and a skewer tested comes out clean.
  9. Remove from oven and let sit in pan for ten mins. before lifting the cake to cool on a wire rack to cool completely.

Ma lai Ko ~ 马拉糕

  Whenever we 'yum cha' in a Chinese dim sum restaurant we never fail to order and try their Ma Lai Ko, which is a brown sugar steamed fluffy sponge cake and what most kids would like to have.  I have been looking for a simple recipe to make this Ma Lai Ko.  Some recipes require a fermented starter dough which will result in streaky patterns in the Ma Lai Ko, some will just go with baking powder and sodium bicarbonate but I chance upon this recipe which requires yeast, baking powder and sodium bicarbonate. I made this on a cool, windy, day and was praying that the batter will rest and proof with bubbles after 2  hours and thankfully it did.  I was very pleased when the cake looked good after I opened the lid of my steamer and the taste was superb, not overly sweet and the texture, nice, soft and moist.  I kept the remaining pieces of 'ko' in a container, at room temperature and they stayed nice and moist even on the third day, maybe because the weather was cool and not

Prawn Omelette
