Pumpkin Rice

Yet another one pot meal, introduced by a close friend of mine, easy and simple to cook especially for two people.

the rice is just cooked in the rice cooker .......... give it a stir, add salt to taste

this is indeed delicious, wholesome, full of pumpkin goodness, protein, all in one ........

Recipe for Pumpkin Rice

Ingredients
  • 300 gm Pumpkin, cut into cubes
  • 100 gm pork fillet, diced
  • 20 gm dried shrimps
  • 3 pips garlic, chopped
  • *1 cup Taj Mahal Herba Ponni rice
  • 3 cups water
  • 2 Tbsp ol for frying
  • Spring onions for garnishing
Seasoning
  • 2  Tsp light soya sauce
  • 2  Tsp Oyster sauce
  • 1  Tsp sesame oil
  • 1/2  Tsp salt
  • 1/2  Tsp dark soya sauce
  • 1/2  Tsp sugar
  • a dash of pepper

Preparation
  1. Saute the chopped garlic till fragrant, add in the dried shrimps.
  2. Add in the seasoned meat, pumpkin cubes and 2 Tbsp of water and fry till semi-cooked.  Dish out and set aside.
  3. Wash and cook rice in rice cooker with 3 cups of water.
  4. After cooking for about 10 to 15 mins., place the semi cooked pumpkin, meat on top of the rice.
  5. Let rice rest in 'keep warm' cycle for 5 min.
  6. Mix up the rice, add salt, light soya sauce to taste and drizzle in some sesame oil.
  7. Garnish with chopped spring onions, a dash of pepper and a sprinkling of shallot crisps, if desired.
  8. Serve with some chopped bird's eye/ chilly padi.
Note
*  Taj Mahal Herba Ponni rice absorbs more water and increases in bulk when cooked.
Ratio : 1 cup rice to 2.5 or 3 times water
1 cup rice gives 4 servings.
For ordinary rice, use 2 cups rice and 3 cups water.

  6. It's a great one pot meal. It's very easy to make and they look delicious. I bet they are. Thanks for sharing another delicious and easy recipe. I think I would have to use jasmine rice for this though. We don't have the Taj Mahal rice.

    Angie's Recipes
That's the first time I cooked it. Didn't like pumpkin before, but my other half loves it, but now, I've no regrets.

Ya, it's really delicious and easy too.

    My Little Space
Quick and easy meal. Cook this, whip up a vegetable soup and that's it.

    You're welcome Elin. Senang, senang.

I know who's going to have it for dinner. The meat will be cooked because you fry all the ingredients, half cooked prior to putting in the pot. Blanch some vegetables or make a soup, and that's a meal. If you have chilli padi, best! Also made yam/taro rice, will post later.

Jasmine rice will be fine too. Most of my recipes are very simple, one pot meal. We call it 'yat wok sook',(Cantonese) literal translation
    '1 wok cooked', ha, ha.

Char Siew Pau ~ 蒸叉烧包

I have been itching to try out a Pau recipe and vaguely remember that I did make it once, long, long ago.  So I  got hold of my old file of recipes and finally managed to retrieve it.  I did it recently and must say that I'm satisfied with the result.  The texture of the Pau was soft and a bit chewy, wholesome and filling too.  Naturally, they didn't look so nice and round like the ones sold in the dim sum restaurants, but nonetheless I think homemade ones can be just as delectable as well.

Pumpkin Carrot Cake

I have never tried baking cakes with raw pumpkin and was glad when Amy Beh shared a recipe for Pumpkin Carrot Cake.  The moist cake tasted good, the sweet pumpkin blended well with the slightly sourish cranberries.  I have reduced the sugar somewhat and tweaked the method too.  I'll be baking this again for the Chinese New Year.  This cake was an instant hit with my family ....... Try it!

Pineapple Tarts ~ CNY 2013

Chinese New Year is not too far away and a quick look at the supermarkets and bakeries revealed that the prices of the festive goodies have gone up again.  Prices of  food stuff have gone up drastically and look like they are here to stay.  It's much more economical  to DIY when you know how to do so....... These Pineapple 'Closed' Tarts are a bit different from the  Nastar   I posted previously.  Shaping the tarts this way is less time consuming and moreover they taste just as good! Recipe for Pineapple Tarts ~ CNY 2013 Ingredients  125 gm butter/margarine 25 gm icing sugar 1 egg yolk 190 gm plain flour 1 Tbsp cornflour 1/8  tsp salt 1/4  tsp vanilla 370 gm pineapple paste 1 egg yolk + 1  tsp water = egg glaze Method Sift the plain flour with salt, mix in the cornflour, set aside.
