Pineapple Oat Bars



These health biscuits are good for breakfast and can also double up as a snack. They will come in real handy to satisfy sudden hunger pangs!




Dried fruits, sunflower seeds, honey, oil and orange juice all mixed up in a mixing bowl.
Mix this wet mixture into the dry sifted flour mixture till well combined.
Spread mixture evenly onto a 9 inch sq. tin, lightly greased or lined with parchment paper.
After about 25 mins. in the oven  .................... a light golden slab of goodness awaits you!

Ingredients
  • 1/3 cup honey
  • 1/3 cup canola oil
  • 6 oz dried pineapple - chopped
  • 80 gm sultanas
  • 1/2 cup sunflower seeds
  • 1/4 cup orange juice
  • 4 oz self-raising flour
  • 3/4 cup rolled oats
  • 30 gm wheatgerm
  • 1/2 tsp vanilla
Method
  1. Combine honey, oil, chopped pineapple, sultanas, sunflower seeds, vanilla and orange juice in a mixing bowl.
  2. Mix together sifted flour, rolled oats and wheatgerm till well combined.
  3. Pour the wet ingredients onto the flour mixture and mix thoroughly till fully incorporated.
  4. Spread mixture evenly onto a lightly greased or paper lined 9 inch sq. tin. (I used a springform tin).
  5. Bake in preheated oven @ 180 deg C for about 25 to 30 mins. or till lilght golden brown.
  6. Cut into bars while still warm.
  7. Allow to cool completely in tin and store in a cookie jar.

I have been itching to try out a Pau recipe and vaguely remember that I did make it once, long, long ago.  So I  got hold of my old file of recipes and finally managed to retrieve it.  I did it recently and must say that I'm satisfied with the result.  The texture of the Pau was soft and a bit chewy, wholesome and filling too.  Naturally, they didn't look so nice and round like the ones sold in the dim sum restaurants, but nonetheless I think homemade ones can be just as delectable as well.

Snow Swallow Dessert ~ 天然野生雪燕

  Natural Wild Tragacanth Gum 'Snow Swallow' or Xue Yan is a gum derived from different varieties of sterculia trees.  It's actually a sap drained from the root of the plant and  the gum dries as it exudes and is then collected.  Once rehydrated will increase to about ten times in size and their white stringy, jelly like strands texture resembles that of the much prized and highly valued bird's nest.  One thing to take note when cooking this dessert is that the gum is highly soluble in water and cannot be boiled too long. Since it is 'cooling' for our internal organs, the elderlies should take this in moderation and not recommended for nursing mums for the breast milk may cause the baby to purge.
