Mince Meat with Anchovies 葱炒肉碎江鱼仔


This is another homey dish which will pair very well with plain white porridge.  I spotted this dish in an economy rice stall the other day and then I remembered that I haven't had this dish for a long, long time.......






Recipe for Mince Meat with Anchovies   葱炒肉碎江鱼


    Ingredients

    • 250 gm  minced pork, seasoned with a pinch of salt
    • 50 gm anchovies
    • 1 onion, sliced
    • 1 chilli, sliced
    • 1 Tbsp tau cheong/bean paste
    • Sugar to taste
    Method
    1. Heat up some oil in a pan and shallow fry the anchovies till light brown and a bit crispy.
    2. Dish out, set aside.
    3. Saute the bean paste till fragrant, add in the minced pork, stir-fry till cooked.
    4. If dish is too dry, sprinkle on some water, add in the sliced onions, stir-fry.
    5. Toss in the chilli and the anchovies and add sugar to taste.
    6. Dish out and serve.

    I love this combination of beef and anchovies. I guess when you think about, Worcestershire sauce enhances the flavor of beef so why not in this recipe.

Pineapple Tarts ~ CNY 2013

Chinese New Year is not too far away and a quick look at the supermarkets and bakeries revealed that the prices of the festive goodies have gone up again.  Prices of  food stuff have gone up drastically and look like they are here to stay.  It's much more economical  to DIY when you know how to do so....... These Pineapple 'Closed' Tarts are a bit different from the  Nastar   I posted previously.  Shaping the tarts this way is less time consuming and moreover they taste just as good! Recipe for Pineapple Tarts ~ CNY 2013 Ingredients  125 gm butter/margarine 25 gm icing sugar 1 egg yolk 190 gm plain flour 1 Tbsp cornflour 1/8  tsp salt 1/4  tsp vanilla 370 gm pineapple paste 1 egg yolk + 1  tsp water = egg glaze Method Sift the plain flour with salt, mix in the cornflour, set aside.
